This is hands down my most favorite winter comfort food of all time - it's called Hearty Hodgepodge. I think the original recipe came from a Better Crocker crock pot recipe book, but I've modified it a bit (it's a very forgiving recipe). And the best part - every single human LOVES it. Unless I just have really polite friends... Nope, I just thought about my friends and I can assure you they're not all polite. So they must genuinely love this meal!
Here's all you need: 2 pounds of cooked ground beef, 2 cans of Pork N Beans, 2 cans of Campbell's minestrone soup (if you like it thick, otherwise you can use 2 cans Progresso minestrone which will give it a little more liquid), 1 cup diced celery, and 12 ounces of tomato juice. If you like onions you can dice up a small one (or I just use minced dried onion instead). For spices, add a teaspoon of Worcestershire sauce, some black pepper, a sprinkle of oregano, and 1 clove minced garlic. This recipe really is very forgiving and if you like more or less of something (more meat, less beans, more beans, more soup, etc) it will still come out amazing! Mix it all together in a crockpot and let it cook! Technically everything is cooked already, so the timing is very forgiving - you can put it on high for 3-4 hours, or low for 6-7 (or shorter/longer depending on what you need - it keeps well!) and then EAT!
So if you've ever wanted to try a recipe from the internet, THIS should be the one. My family looks forward to eating Hearty Hodgepodge every winter - and I promise fluffy biscuits are worth more of your time than fluffy snow gear. :)
