As you know by now, I'm obsessed with make ahead food, repurposed food, things I can freeze, etc. I made these last night and not only were they super easy, but they freeze well and the kids can also use them as lunch or an afternoon snack! Oh how I love multipurpose food ideas.
This only needs a few ingredients (I had some ham to use up, but don't forget you can improvise quite a bit on this one - try pizza sauce, cheese and pepperoni or sausage, turkey and cheese, chicken, whatever!)
(And for a variation of this if you don't want to use a muffin tin, you can also simply put the ingredients in the muffin and roll them up like a pocket and bake them on a baking sheet, or you can smash all your dough together and make a big calzone or braid with the same ingredients! If you go that route, I would brush the dough with some egg before baking, just so it gets nice and crispy/golden brown. :)
