With summer finally upon us, I love having a few go-to recipes that I can make for ANY party - pool parties, picnics, holiday gatherings, etc. Veggie pizza is one of my favorites to make all summer long - it's easy, you can roll with several variations of it depending on what foods you already have in your fridge, and you can make it ahead of time! Win! This is such a forgiving appetizer that it literally comes out different every time I make it, depending on what veggies I already have on hand. My "usual" though includes carrots, broccoli, and sliced tomatoes - but seriously, ANY veggies work! Like cucumbers? Peppers? Whatever, throw them on! There are 3 main components to this - crescent roll dough (or crescent sheets if you prefer those), cream cheese/sour cream/ranch dip, and an array of veggies. Here's your simple tutorial! Grease a baking tray and roll out the crescent dough - pinch any creases together (I use 2 full rolls when I do this). Bake at 350 for about 11-12 minutes, until it turns a nice golden brown. Let cool for at least 30 minutes while you relaxingly sip on a glass of wine (okay, instead you spend the 30 minutes looking for swim floaties, goggles, doing yet ANOTHER load of laundry, etc). During this down time you can also prepare your "sauce" - use half a block of cream cheese mixed with 1/2 cup of sour cream - I love also mixing in a few generous squeezes of ranch dressing for flavor... Yum! You can also sprinkle in a few shakes of Dill and some garlic powder for seasoning. Mix well. After the dough is cool, spread on the sauce mix, covering the entire pizza. Very delicious on a warm summer day by the pool! (And it gets in your veggie count for the day, so that's a plus! :)
