I'm not saying I invented this new one, but I at least made it up in my head based on things I like. I saw a recipe for cream cheese stuffed chicken wrapped in bacon - and I thought "I can do a little better than that." Instead of cream cheese, I decided to use goat cheese for a much stronger flavor - then I added green onions and sundried tomatoes for a kick - then wrapped it in bacon and put it on the smoker. Mmmmm.
Then, cook it - sure, you can throw this in a 9x13 pan and bake if you need to, but it's SUMMER - so I would highly recommend you throw these on the grill or a smoker. We made these on the small side (2-3 per each chicken breast) so our cook time on 375 on the smoker was about 30 minutes. Once the bacon is golden brown, you're ready to go! (Though check the inside temp of your chicken just to be safe. :)
