BUT, for some reason, topped with fresh cheese, basil and balsamic - I can't get enough! So if you're looking for a quick, easy, tasty summer party food, give this a try! :)
This is one of my absolute favorite summer recipes, and perfect for that time of year when your tomato plants are going nuts and you have too many to eat (or better, when your friends do all the gardening for you and just give you some of their surplus! :) You can make these into kabobs, or just make a big dish like this one above. It's SUPER easy, only takes a few minutes, and you can make it earlier in the day and let it chill in the fridge until you're ready to serve it! Bonus, it only takes a few ingredients too! The bulk of it - tomatoes and mozzarella. Simply slice these and layer them together in a cute dish. Sprinkle on some salt, thrown on some basil leaves, then top with some balsamic dressing.
