More importantly in my household, March Madness is underway - which means instead my kitchen is full of "man food" - which means heavy on the meat, light on the frou frou veggies. Every year at this time there are men coming and going at all hours of the night (go ahead, insert a filthy joke here...) - and they are ALL hungry. One year we literally cooked 40 pounds of meat for this opening March Madness weekend - and I don't recall having much leftover.
Our menu is usually made up of a lot of smoked meats and of course my signature - bacon on everything. We have smoked BBQ pork (great on sliders, then reheated later on top of a baked potato or baked pork nachos - yum!) Also meatballs, shredded chicken, wings, ribs, and brats (did I mention there were a lot of hungry men coming?? :)
I keep the sides pretty simple and make a few things that I can reheat later for the next batch of people - loaded smashed potatoes (hello, more bacon), cowboy beans (yep, more bacon!), pasta salad (you know I put bacon in that too!) - then of course there is no shortage of crock pot dips as well (chili cheese dip, buffalo chicken dip, etc).
