Let's take a closer look at what's inside some of these:
I am a big fan of "stir-fry" type meals - chicken, pork, or whatever meat we have for that week's dinner, mixed with some whole grain noodles or brown rice (a little dollop of teriyaki sauce will do wonders for these!) and sometimes I even add a little peanut butter into the sauce for an awesome flavor (extra protein!). I'm also a fan of burritos (any kind!) and these can be made ahead and frozen - perfect to pull out whenever you need them for the week. They thaw overnight and are perfect to microwave the next day! I like making these with chicken or beef, beans, and a little cheese - mmmmmm. I literally make extras of these every time we have Mexican food (seriously, just throw all your leftovers in a tortilla - then wrap, and freeze) - then you always have a spare meal (or 5) waiting for you at any given moment. Also, hardboiled eggs are great for some added protein to keep you full for a snack, along with some nuts (by putting them into these little dollar store containers, it limits how many I actually eat vs. just eating them straight out of a huge bag).
Then seal up all the containers in the fridge until you're ready to take them with you!
There are so many perks to these make-ahead meals: they save you lots of money (more shoes!! :), they save time (I literally make these while I'm making dinner on Sunday night while I already have a bunch of food out), and they are great for portion control/curbing daytime cravings when you'd otherwise be vulnerable to make bad food choices.
