So now that I've completely lost your trust, here some other concoctions from the weekend: veggie and meat kabobs over the fire - always a win.
Once a year we go camping - full on sleep-in-a-tent camping in the woods. I absolutely love it because it's such a departure from my normal day-to-day life. BUT, I'm also a foodie, right? And fortunately our camping friends are too, so it works. So instead of hot dogs over the fire every night, we definitely step it up a little bit. Here's what we grubbed on last weekend, starting with my favorite camp food - the pork s'more, or as I like to call it - The S'mork. You're panicking right now, I can see it all over your face - who would dare put BBQ pork on a dessert?! Pig farmers, that's who. And I swear to you, even though the "idea" of it is a little freaky - MOST people who try it love it! Something about the salty pork with the gooey marshmallow and chocolate.... Mmmm. You still think this is a joke, or a dare at the very least, right?? But I am not kidding - try it, and there is an 88% chance you will love it. Do it. Like, now. So now that I've completely lost your trust, here some other concoctions from the weekend: veggie and meat kabobs over the fire - always a win. For breakfast, we had omelets-in-a-bag and fire roasted potatoes. For the omelets, simply put your eggs and desired omelet ingredients into a Ziplock bag, seal it, then drop the bags into a boiling pot of water. Cook for about 15-17 minutes, then slide out of the bag and eat! I know, it sounds a little strange, and the consistency is ever so slightly different, but the taste is superb, and just like a regular omelet! :) This next meal was probably the most amazing - Cajun foil packets. I've seen these all over Pinterest and they did NOT disappoint! There is a lot of prep work ahead of time (the potatoes were par boiled so they wouldn't take too long over the fire, the sausage was all cut up, and everything was seasoned and divided into individual servings). Let me tell you - these were absolutely AMAZING.
