So as you know, I'm obsessed with make-ahead meals. They're brilliant. It saves you time and money, and I like both of those things. BUT... I'm not one of those people who sets out to spend 6 hours doing this on a Sunday once a month. I just can't fit it in my schedule (translation - I would rather do something more fun. :) But, if you make just a few at a time while you're already prepping dinner, you can build up quite a collection with VERY litter effort!
Now don't get me wrong, I know these aren't "complete" freezer meals - you need to add some veggies and such, but I prefer those fresh and they don't take much time (or lets be honest, you can serve these with a salad, that counts too!) - either way, you've eliminated all of the prep work (cutting, marinating) and you can either throw these in the crock pot, cook the chicken on the grill, warm up the beef on the microwave or stove, etc... and dinner is ready! :)
So if you don't do a lot of freezer cooking, I just want to show you that it's much easier than you think. You don't have to prepare a month's worth of food at one time - it's simply wonderful to have even just a few meals ready to go for when you're too busy to make a good hearty meal. All you need to do with these is lay them out the night before to thaw and then they're ready to go the next day! :)
